Shrimp Spinach Salad

Okay, so Karin got after me for not posting anything on here yet. Well, here is my first real contribution.
Shrimp Spinach Salad

Ingredients:
HOT BACON BALSAMIC VINAIGRETTE:
2 egg yolks
1/2 cups extra virgin olive oil
1/4 cup Balsamic vinegar
4 or 5 slices bacon
1 green onion, roasted
1 cloves garlic, roasted (or 1/2 tsp minced garlic from the jar)
1 tsp dry mustard
1 teaspoons brown sugar
1/2 teaspoon Worcestershire sauce
Salt and pepper, to taste

SPINACH SALAD: you can use all of the following ingredients or just the ones you like.
spinach
bacon crumbles
red onion, sliced
feta cheese, crumbled
craisins
can of mandarin orange slices
almond slivers
large or medium shrimp, sauted

HOT BACON BALSAMIC VINAIGRETTE:Combine egg yolks and 4 tablespoons of liquid from recipe in a sauce pan and cook over lowest heat until it starts to thicken, stirring the entire time. Set aside and let it cool a little. Cut frozen bacon into 1/4" strips and then the other way into 1/4" pieces. Cook bacon and sliced green onion. Save the bacon grease in the pan. With a blender or mini food processor, emulsify(mix) egg yolks and remaining oil until thick and creamy. Add vinegar, cooked bacon pieces and all other ingredients, and season to taste with salt and pepper. Set dressing aside.
SPINACH SALAD: Cook the shrimp in the left over bacon grease. Plate spinach and garnish with the rest of the ingredients, placing grilled shrimp/prawns on top.

NOTES: The vinaigrette recipe will make enough for about 8 servings. With the salad ingredients use whatever amount of each to your taste. The vinaigrette will keep in the fridge in a sealed container for a week or 2, probably more. I used the cooked, veined shrimp with the tails on from the freezer section at Walmart so you don't have to worry about cooking it, just heating it through and let it get a little brown. You can also just put it in the pan frozen and take the tails off when it has defrosted. I also used grated Parmesan cheese (not the kind you shake from the bottle, the kind from the refridgerated section) because I didn't have feta cheese. In the picture above I used red onion slices, craisins, parmesan cheese, shrimp and of course spinach.
Even Josi and Hyrum loved it.
