Pork Cottage Meatballs


4 slices Sourdough Bread
1 lb Mild ground Sausage
3 Eggs
2/3 cup Cottage Cheese
1/2 cup grated Romano Cheese
1/4 cup Fresh Spinach
2 tsp. Basil
2 tsp. Oregano
1/4 tsp. Crushed Red Pepper
1 tsp. Salt
Pepper
Preheat oven to 400*. Break up the bread into small little tiny bits. Do the same with the Spinach. Add all the ingredients together and mix well. Shape into approximately 20 Jumbo Meatballs or 40 smaller size ones. Transfer to a lightly oiled sheet pan. Place meatballs in the oven and bake for about 30 minutes. On very low heat, simmer several cups of canned spagetti sauce. Remove meatballs from oven and use a spatual to losen each meatball from the pan. Add meatballs to simmering sauce on stove. cover and simmer on low heat for 30 minutes.
While meatballs and sauce are on stove, cook the pasta of your choice. Serve meatballs and sauce on top of pasta..
We like to use Garlic and herb Spagetti Sauce and Whole Grain Angel Hair Pasta with this..
P.S. This makes TONS and is very filling and for our family we still seem to have leftovers...
