Frosted Pumpkin Squares

Preheat oven to 350 degrees
2 cups sugar
4 eggs
beat sugar & eggs for 2 minutes at medium speed

2 cups pumpkin (libby's small can)
1 cup oil
Beat in pumpkin & oil for 1 minute at medium speed

Add dry ingredients and beat for 1 minute at low speed:
2 cups flour
1 tsp. baking powder
1 tsp. cinnamon
2 tsp. soda
1 tsp salt
Grease Jelly Roll pan
Pour batter in pan and Bake 25-30 min
(set out cream cheese & butter to soften for frosting)

Frosting
Beat together:
2 1/4 cups powdered sugar
3/4 cup cream cheese, softened
6 TBSP Butter, softened
1 1/2 tsp. vanilla
Spread on cooled cake, can sprinkle with chopped nuts

This is a jelly roll pan (cookie sheet) So it serves tons!
Plan on sharing several plates with friends and having leftovers for your own family

I made this for snack yesterday and oh my gosh!! My husband and kids ate almost the entire pan by the time the night was over!! It was sooo good.. What a hit.. We will definately be making this again. Now just keep adding some more, I am the only one adding recipes lately. Did everyone forget to keep adding??
