The thing I love best about the fall is all the yummy food to make with pumpkin! I never had much of pumpkin anything (except pie at Thanksgiving), and then last year I tried pumpkin cookies, pancakes, muffins, cake- I went on a pumpkin craze!!!
Serves 6
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Serve with butter, syrup or cool whip. I am not a fan of butter at all so I like to put a tad of syrup and cool whip.

I made these this morning (Monday) since I did't make traditional pancakes last Saturday. All of my kids and husband really liked them and one son asked to have them on Halloween morning. Thanks!

I made these again this year. I added cinnamon chips from http://www.preparedpantry.com/cinnamon-chips.aspx. You may also use Hershey's mini cinnamon chips. We add applesauce, sliced bananas and whipped cream, with maple syrup over our pancakes.
