Brown 1 lb lean ground beef with 1 medium chopped onion.
Drain.
Add:
1 pkg taco seasoning
16 oz. can corn (drained)
16 oz. can kidney beans (drained)
28 oz. stewed tomatoes
8 oz. tomato sauce
Simmer 20 min.
Top with grated cheddar cheese & tortilla chips on individual servings.

This looks so yummy! For some reason I keep picturing you in chilly Utah eating all these delicious warm meals when in fact you are in weather similar to us, lol! It's quite the adjustment to enjoy fall/winter foods when it is still 90 degrees outside, however, with recipes like this it is unavoidable!
