Ingredients:
1/2 cup shredded mozzarella cheese
2 tablespoons diced pimiento (haven't used it yet myself)
2 tablespoons chopped black olives
4 small zucchini, sliced lengthwise
1 tablespoon olive oil
Turn oven on to broil. The oven rack should be at least 6 inches below the heat source. Line pan with foil. Blend cheese, pimiento & olives in bowl and set aside. Brush zucchini halves on both sides with oil. Broil 5 minutes then spoon 2 tablespoons cheese mixture onto each zucchini half. Put it back in the oven until the cheese melts.
It comes out so juicy and yummy. I've never had the pimiento in the house when I was in the mood to make it so I just mix the cheese and olives together.
